- 1 cup butter softened to room temperature
- 1 cup dark brown sugar packed
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups old-fashioned oats
- 2 cups all purpose flour
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 1/2 cups dried cranberries
- 1 1/2 cups white chocolate chips
- 3/4 cup diced walnuts or pecans, optional

Preheat the oven to 325 degrees. Line a baking sheet with parchment paper.

Using a mixer, beat softened butter with brown sugar until light and creamy. Add eggs, one at a time and mix to combine with butter mixture. Add in vanilla and mix to combine.

In a separate mixing bowl, add oats, flour, salt, and baking soda. Stir to combine.

These cookies can be frozen but should not be refrigerated. Refrigerating will dry out the cookies.
