Start by stacking the mint leaves into two small piles. Thinly slice them across to create delicate ribbons.

In a small bowl, whisk together the lime juice, olive oil, honey, salt, and pepper until well combined.

Frequently Asked Questions

Can I make watermelon cucumber salad ahead of time?

Yes, but it’s best enjoyed fresh. If you need to prepare it ahead, cut the watermelon and cucumber and store them separately. Assemble and dress the salad shortly before serving for the best texture.

How long does watermelon cucumber salad last in the refrigerator?

Store leftovers in an airtight container in the refrigerator for up to 2 days. Keep in mind that the watermelon will release moisture as it sits, so the salad may become softer over time.

What is the best cucumber to use?

I prefer hothouse or English cucumbers because they have thinner skin and fewer seeds. However, regular garden cucumbers work well too.

Can I use bottled lime juice?

Fresh lime juice provides the best flavor, but bottled lime juice can be used in a pinch.

Can I add feta cheese?

Absolutely! Feta adds a delicious salty contrast to the sweet watermelon and is one of the most popular additions to a watermelon cucumber feta salad.

Can I make this salad dairy-free?

Yes. Simply leave out the feta cheese or replace it with your favorite dairy-free alternative.
