Ingredients You’ll Need for Tuscan Soup

Full of classic Italian flavors, this Tuscan chicken and pasta soup is sure to warm you up from the inside out. It’s ready in just four simple steps and is made all in one pot! Serve it as a hearty side or main course — this soup is like a big hug in a bowl. Let’s take a look at what ingredients you’ll need to have on hand:

• Olive oil: You’ll need olive oil to cook the chicken and saute the onion and garlic.
• Boneless, skinless chicken breast: This lean protein is full of nutrient-rich benefits and will add a delicious and tender texture to the soup.
• White onion & garlic: The aromatic duo of onion and garlic adds a flavorful base to the soup.
• White beans: We used cannellini beans, but you can also use any white beans you have on hand.
• Tomatoes: We diced tomatoes with basil and garlic for extra flavor.
• Low-sodium chicken broth: A great way to reduce the sodium content in your soup while still maintaining the rich and savory flavor.
• Whole wheat pasta: This kind of pasta not only adds a wholesome element to the soup but also has additional fiber and protein.
• Fresh spinach: We used baby spinach, but any type of fresh spinach will work.
• Italian seasoning: Adds that extra touch of Italian flavor!
• Salt & pepper: Enhances the overall taste of the soup.
• Parmesan cheese: Some grated Parmesan cheese on top adds a nice tangy and salty contrast to the soup.

Recipe Variations and Cooking Tips

We know not everyone likes the same things. You’re welcome to swap and add different ingredients to make this soup your own. Here are some yummy suggestions:

Vegetarian: Simply omit the chicken and use vegetable broth instead of chicken broth.

Seafood: You can add shrimp, clams, or any other type of seafood to make a delicious seafood version of the soup.

Spicy: Add some red pepper flakes or cayenne pepper for a kick of heat.

Creamy: If you prefer a creamy broth, add some heavy cream or coconut milk.

Kale: Instead of spinach, you can use curly kale for a heartier and more nutrient-dense option.

Carrots and Celery: Add in some chopped carrots and celery for extra vegetables and crunch.

We also have a few tips to make things more delicious and easier than ever:

• Have a Dutch oven? Use it to make this soup! The heavy bottom of a Dutch oven helps to evenly cook the ingredients and develop more depth of flavor.

• You can also make this Tuscan chicken and pasta soup even easier by using leftover chicken or shredded store bought rotisserie chicken!

Storage and Reheating Advice for this Soup Recipe

Allow any leftover soup to cool to room temperature. Store the soup in an airtight container in the refrigerator for up to 4 days. To reheat, heat it on the stovetop or in the microwave until heated through. If you use the microwave, check it and give it a stir every 30-60 seconds. You may need to add a splash of water or broth if it thickens too much in the fridge.
