Using Leftovers: Beneficial in More Ways than One

Using leftovers to create a new dish from scratch has always been a surefire way to save a few bucks during the week. But using up your leftovers is also a great way to save precious time! Not having to cook an entirely new meal every night is a definite win! And your health will thank you too! Preparing meals at home instead of ordering take out or going out to eat is one of the best ways to cut down on calories and harmful ingredients! This homemade classic fires on all cylinders when it comes to ease of preparation, nutrition, flavor, and more.

Preparing this Leftover Chicken Chili Step-By-Step

You’ll want to begin by sautéeing your onions with a bit of olive oil over medium heat! Be sure to get a nice color on them!

Next, add your shredded chicken and spices into the mix, and let it soak up all the flavors. Give it a stir before moving onto the next step!

Grab your veggies and add them to the chicken! Once the vegetables and beans have been mixed in well, and brought to a boil, it’s time to turn down the heat. Cover the pot and let the chicken chili simmer for 15-20 minutes.

Then, all that’s left to do is add some salt and pepper (however much you like) and serve! So simple and seriously satisfying.

I’m allergic to tomatoes. Can I modify this recipe to accommodate that allergy?

Of course! Use a green chili tomatillo, green enchilada sauce or fresh tomatillos instead. Be sure to adjust the chicken broth amount to accommodate the additional liquid if you use green enchilada sauce.

Can I use a packaged chili mix instead of the individual spices?

Yes, you certainly can! Be sure to remember that packaged chili mixes may contain additional or artificial ingredients. Also remember to adjust your salt because the packaged mixes usually contain sodium.

What can I use instead of shredded chicken?

Ground beef, shredded beef, ground turkey, and ground chicken are all wonderful alternatives to shredded chicken. Or, make this a vegetarian chili by bulking up the veggies and beans and/or adding in any of the veggies mentioned in the next question!

What other veggies can I use in this leftover chicken chili?

Feel free to add in any of the following chopped veggies: zucchini, carrots, spinach, sweet potatoes, or winter squash.
