How to Make This Mango Yogurt Parfait
Add the frozen mango, lemon zest, Greek yogurt, coconut milk, and honey (if using) to a blender or food processor. Blend until smooth and creamy. The mixture should be thick enough to hold its layers. If needed, add a splash of extra coconut milk until it reaches your preferred consistency.
Pour about one-quarter of the mango mixture into a tall serving glass. Add a layer of strawberries, blueberries, granola, and pecans.
Repeat the layers by pouring in more of the mango mixture until the glass is about three-quarters full. Finish with the remaining berries, granola, and nuts for the perfect crunchy topping.
Serve immediately and enjoy this refreshing mango berry parfait while it’s cold.

FAQ
Can I make this mango yogurt parfait ahead of time?
Yes! You can prepare the smoothie mixture ahead of time and store it in the refrigerator. For the best texture, assemble the parfait just before serving so the granola stays crunchy.
Can I use fresh mango instead of frozen?
Absolutely. Fresh mango works well, although you may want to add a few ice cubes to create the thick consistency that makes this breakfast parfait recipe so satisfying.
What kind of yogurt works best?
I prefer plain Greek yogurt because it’s thick, creamy, and packed with protein. Regular yogurt or dairy-free yogurt alternatives also work well.
Can I make this dairy-free?
Yes. Simply substitute your favorite dairy-free yogurt for the Greek yogurt.
Is this good for meal prep?
Definitely. Prepare the smoothie base and chopped fruit in advance, then layer everything together when you’re ready to eat.
What other fruits can I use?
This fruit and yogurt parfait is incredibly versatile. Try peaches, raspberries, blackberries, kiwi, pineapple, or bananas depending on what’s in season.
