Not your average corn on the cob.

When fresh sweet corn is in season, this instant pot corn on the cob is one of my favorite side dishes to make. It’s incredibly easy, cooks perfectly every time, and there’s no need to heat up the grill or a big pot of boiling water. While the corn is delicious on its own, my creamy chipotle sauce takes it to another level with smoky peppers, tangy Greek yogurt, fresh lime juice, and cilantro. It’s the perfect side dish for everything from weeknight dinners to backyard barbecues.

Ingredients Needed to Make This Instant Pot Corn Recipe

For the Corn

• 4 ears sweet corn, husked
• 1½ cups warm water
• 1 teaspoon kosher salt

For the Creamy Chipotle Sauce

• 1 cup plain Greek yogurt
• 1/4 cup canned chipotle peppers, puréed (adjust to your preferred spice level)
• 2 teaspoons fresh lime juice
• 2 tablespoons chopped fresh cilantro

How to Make Instant Pot Corn on the Cob

Cook the Corn

Place the trivet or steam rack inside your Instant Pot and arrange the husked ears of corn on top.

Pour the warm water into the bottom of the pot and sprinkle in the kosher salt.

Lock the lid into place and make sure the pressure valve is sealed. Select Manual or Pressure Cook on High Pressure and set the timer for 5 minutes.

Keep in mind that the Instant Pot will need a few minutes to come to pressure before the cooking time begins.

When the timer finishes, allow the pressure to naturally release for 10 minutes before carefully releasing any remaining pressure and removing the lid.

The result is perfectly cooked pressure cooker corn on the cob that’s tender, juicy, and ready for toppings.

Make the Creamy Chipotle Sauce

While the corn cooks, stir together the Greek yogurt, puréed chipotle peppers, and fresh lime juice until smooth.

Drizzle the creamy chipotle sauce generously over the cooked corn, then sprinkle with chopped cilantro before serving.

Ingredient Swaps and Additions

One of my favorite things about this chipotle corn on the cob recipe is how easy it is to customize.

• Substitute sour cream for some or all of the Greek yogurt.
• Use mayonnaise for a richer, street corn-inspired sauce.
• Swap cilantro for fresh parsley if you’re not a cilantro fan.
• Replace lime juice with lemon juice for a slightly different citrus flavor.
• Reduce or increase the chipotle peppers depending on how spicy you like your corn.

Delicious Additions

• Crumbled cotija cheese
• Freshly grated Parmesan
• Chili powder
• Smoked paprika
• Garlic powder
• Tajín seasoning
• Everything bagel seasoning
• Crumbled bacon
• Green onions
• Chopped jalapeños
• Fresh avocado
• Melted butter
• A squeeze of extra lime juice

These simple additions make this flavorful corn recipe easy to adapt for everything from family dinners to summer cookouts.

FAQ

How long does it take to cook corn on the cob in the Instant Pot?

The corn cooks under high pressure for just 5 minutes. After cooking, allow a 10-minute natural pressure release before opening the lid for perfectly tender kernels.

Can I cook frozen corn on the cob in the Instant Pot?

Yes! Frozen ears of corn work well. Simply add an extra minute or two to the pressure cooking time.

Do I need to add salt to the cooking water?

Salt adds a little extra flavor, but it’s optional. The corn will still turn out delicious without it.

Can I make the chipotle sauce ahead of time?

Absolutely. The creamy chipotle sauce can be prepared a day or two ahead and stored in the refrigerator until you’re ready to serve.

Is this similar to Mexican street corn?

It has similar smoky, tangy flavors, but it’s a lighter version made with Greek yogurt instead of a mayonnaise-based sauce. If you’d like more of an elote-inspired flavor, add cotija cheese and a sprinkle of chili powder.

This easy Instant Pot corn pairs perfectly with grilled chicken, burgers, steak, pulled pork, barbecue ribs, tacos, sandwiches, and just about any summer meal.
