Today, I’m sharing with you my tried-and-true, easy, and healthy dinner recipes that will help you get out of a dinnertime rut. I’ve ensured that they are easy to make (under 30 minutes!) and also easy to meal prep or make ahead.

Sheet pan chicken and veggies

It doesn’t get any easier than a one-pan meal, like sheet pan chicken and veggies. It’s such a simple way to pack in tons of veggies into a meal.

This is one of those go-to recipes when you have some chicken breasts on hand and leftover vegetables in the fridge needing to be used up. You know, the single potato and carrot on its last leg.

Bacon wrapped chicken

I reckon anything can taste better with bacon, and this is why bacon wrapped chicken is one of my family’s favorite meals. Ever.

You can pre-wrap the chicken with bacon and keep it in the fridge until you’re ready to cook it. Pair them with a grocery store salad (yes, I buy them) and dinner is done.

Air fryer whole chicken

A whole roasted chicken for a busy weeknight dinner? You bet. Air fryer whole chicken is the most hands-off chicken recipe.

I use a simple yet flavorful seasoning mix over the chicken, and while it’s air-frying, I like to whip up a simple Asian cucumber salad and some sautéed potatoes to round out the meal. Other air fryer chicken dinners you may enjoy include air fryer chicken breast and air fryer chicken thighs.

Grilled chicken Margherita

This yummy grilled chicken Margherita is a family favorite and for good reason.

The chicken breast is layered with pesto, cheese, and cherry tomatoes, and grilled to perfection. Every bite is packed with flavor, and it seriously tastes restaurant-quality.

Stuffed chicken breast

Move over, boring chicken breast. Give me this ridiculously delicious stuffed chicken breast.

This quick and easy stuffed chicken is perfect for busy families. The chicken is stuffed with spinach and cheese and seared until the filling is gooey and cheesy. Bonus? It freezes really well, too.

Ground chicken tacos

My recipe for ground chicken tacos is a welcome change from the usual ground beef. Ground chicken is also super lean and versatile, so it takes on whatever seasonings you throw at it!

While we are on ground chicken, try my ground chicken burgers or ground chicken meatballs for another healthy dinner option.

Crispy baked chicken thighs

If you’ve a package of chicken thighs on hand, make my seasoning mix and use it to create crispy baked chicken thighs.

It’s such a set-and-forget kind of meal, and almost any side dish goes well with it. Even some toasted sourdough to mop up those epic pan juices.

Oven fried chicken

I love KFC; my family loves KFC, so here’s my hack for making a copycat, healthy version.

Oven fried chicken has all the texture and flavor of fried chicken, minus the oil. Pair it with some air-fried French fries for a complete takeout-style meal.

Chicken schnitzel

I grew up eating chicken schnitzel regularly, so of course I’m including it in my healthy dinner post!

Essentially crispy breaded chicken, it doesn’t need excessive oil, and the entire dish cooks up in just ten minutes. The leftovers also work well in a chicken schnitzel sandwich.

Lasagna with cottage cheese

A high-protein and cheesier lasagna? Count me in. This cottage cheese lasagna will be one of your new favorite lasagnas ever.

It’s one of my favorite dinners to make ahead. Make a double batch and keep one in the freezer for those extra busy nights.

Healthy meatloaf

So, this healthy meatloaf is making a comeback. Talk about redefining comfort food!

It’s just as juicy and flavorful as any good meatloaf, but cuts back on the fatty ground meat and reduces excess oil or butter. Pair it with my cauliflower mashed potatoes for a low carb dinner.

Grilled flank steak

If I’m not making shoulder steak or skirt steak, you can bet that grilled flank steak is on the menu.

It’s one of the few affordable steaks available at the grocery store, and doesn’t require much to make it shine.

Round steak

If you need a fuss-free and classic steak to enjoy over a steak bowl or in a steak salad, my round steak is the MVP.

Often used for slow cooking or braising, I find a quick pan sear is all you need to round out a wholesome meal in record time. Bonus? No marinating needed!

London Broil In Oven

Cooking London Broil in the oven is one of my favorite cooking hacks, and transforms this old-school classic into a healthy weeknight dinner.

The meat practically melts in your mouth, and it doesn’t need much to make it shine.

Air fryer salmon

This air fryer salmon is my lazy yet healthy weeknight miracle. It’s crisp on the edges and flaky in the middle, and cooks up in just 6 minutes.

Serve it with potatoes, a salad, or straight out of the air fryer basket like I do when I’m impatient. Air fryer salmon bites are also a delicious option!

Air fryer tilapia

Tilapia in the air fryer is so fast (just 7 minutes) and yields a flaky and tender fish. I keep the seasoning simple and let the air fryer work its magic. Pair it with rice, veggies, or a simple salad. To jazz it up, you can try parmesan crusted tilapia.

Oven baked salmon in foil

There’s something special about cooking salmon in foil with some lemon and herbs. Everything steams up gently in the packet, yielding flaky and flavorful fish that redefines low effort.

Baked flounder

If you haven’t tried baking flounder, now is the time. It’s a high-protein and lean fish that doesn’t need much to make it shine. I like to drizzle it with a lemon butter sauce, and it’s always impressive.

Chilean sea bass

Whenever I want a healthy yet elegant dinner to serve my family, I make Chilean sea bass. It’s buttery rich and naturally tender, so I stick to pan-searing it for a few minutes.

Rockfish recipe

I didn’t grow up cooking rockfish, but it’s now one of my go-to healthy dinners. It’s the lemon caper butter sauce that takes it to the next level, so don’t forget some crusty bread for dipping.

Miso salmon

I could and do eat miso salmon every week, and I’m not bored yet! The sticky marinade sticks to the salmon and caramelizes beautifully. I like to pair it with some sautéed broccolini and some basmati rice. Yum!

Baked haddock

Baked haddock is what I make when I want something cozy but light and fresh. It’s simple but not dull, and great for those who want a mild-tasting fish. Pair it with lemon wedges and some roasted potatoes and carrots for dinner.

Grilled tuna steak

I always forget to include grilled tuna steaks in my healthy weeknight repertoire. They are so fast, like faster than pasta fast. It’s one of my family’s favorites in the warmer months over a salad!

Tuna casserole

Who said tuna casseroles need soup mix or pasta to be satisfying? My easy tuna casserole delivers. The whole thing bakes up golden and cheesy, and it feels like a retro comfort dish, but so much better.

A few other canned tuna favorites include tuna patties or tuna croquettes.

Dahl

My mom’s Dahl is one of those cozy yet healthy meals that are both filling and rich in plant-based protein. I use red lentils, but any other type of legume will work. This is also great for meal prep!

Chana masala

If you need a “clean out the pantry” healthy dinner, try chana masala. Everyone has a can of chickpeas and tomatoes lying around, and once you add some seasonings and onions, it’s magic!

Tuscan white bean soup

My family calls this soup comfort in a bowl. Creamy white beans add protein and fiber, and I sneak in some extra greens at the end. It’s ready in about 30 minutes and perfect with some crusty bread.

Cauliflower steak

Yes, I know this is not an actual steak, but cauliflower steak is a fantastic way to use cauliflower. It’s roasted until caramelized around the edges and meaty in the middle. You seriously won’t miss the meat.

Oven baked bone-in pork chops

If you thought cooking bone-in pork chops was tricky, try these oven-baked ones. They are quickly marinated, and then the oven takes care of the hard work. I often roast some root vegetables at the same time.

Air fryer pork chops

An oldie but a goodie, air fryer pork chops are a weekly staple. They are perfectly seasoned and cook up in just 9 minutes. It’s a weeknight dinner lifesaver.

Pork green chili

I have a few make-ahead dinners, and pork green chili is one of them. It can simmer all day, or you can use the Instant Pot to make it in minutes.

It’s packed with protein and can be eaten as is or over a baked potato for a more filling option. It’s even better the next day (if there is any left!).

Pork steaks

Okay, hear me out. Pork steaks are so underrated. It’s a blend of pork chops and pulled pork, making it a weeknight favorite. Sometimes I cook them on the BBQ, but they are great seared in a pan.

Air fryer lamb chops

Lamb chops in the air fryer? Yes, it’s a game-changer. It’s the easiest way to cook them and never dries out: just juicy, tender perfection. Pair them with some air-fried red potatoes, too.

Lamb lollipops

If you want an impressive and healthy dinner in one, look no further than lamb lollipops. They are quickly seared to trap in all the juices, so I recommend serving them with some rice or mashed potatoes to soak up the flavors.

Veal cutlets

Veal cutlets are such a throwback for me, as my mom would cook these almost every week. They are pretty lean and versatile, so they pair well with nearly anything. Don’t forget to squeeze some lemon on top.

Veal chops

So, this might not be unusual to a few of you, but for others, veal chops are a completely new experience. They are similar to lamb, but much more meaty. Serve with salads, roasted veggies, or couscous.

Veal parmesan

Comforting healthy food? Look no further than veal parmesan. You get the crispy breaded cutlets topped with marinara sauce and cheese. It’s baked until bubbly and golden, and is a meal in itself.
